RampChi: naturally fermented ramp kimchi

$14.00

Through the magic of sustainable harvesting, cultivation, and fermentation, we bring you RampChi, named after its similarity in spices to the Korean dish Kimchi. This living food is created with local, raw ingredients, including our own Burgeoning Farm honey, locally grown ginger and tumeric and, of course, ramps that are wild-harvested each spring. All these are mixed together by hand and naturally fermented. Complex flavors and textures will evolve as the fermentation culture continues to grow, bringing magic to your mouth and benefit to your belly.

INGREDIENTS: ramps, salt, red pepper flakes*, ginger, turmeric, smoked paprika*, tamari*, honey, toasted sesame oil*

Ramps (Allium tricoccum) are perennial woodland plants native to the Eastern United States. Members of the Lily family, fresh Ramps taste like the lovechild of leeks and garlic and thrive in the shade of our majestic forests.

At Burgeoning Farm, we focus on sustainably harvesting the leaf and allowing the perennial bulbs opportunity to regrow for years to come.  Wild-gathered from suitable habitats, Ramp cultivation requires no tillage, weeding or irrigation, reducing our footprint on Gaia.
